Ingredients
4 persian cucumbers or half of an english cucumber, seeds removed
½ cup plain greek yogurt
2 teaspoon dill, dried or fresh
1 large garlic clove, minced
2 teaspoon salt
Zest of ½ lemon
Juice of ½ lemon
Directions
1. Peel and shred cucumbers using a cheese grater.
2. Place cucumbers in cheesecloth or paper towel and squeeze out the moisture.
3. Add cucumbers, greek yogurt, dill, garlic, salt, lemon zest and lemon juice to a bowl and mix until combined.
4. Refrigerate for at least an hour for flavors to combine.
